  • 500 grams Beef Mince (for a leaner option, use ground turkey)
  • 1 large Brown Onions (or shallots for a milder taste)
  • 2 medium Red Capsicums (or substitute with green peppers)
  • 2 cloves Garlic (or garlic powder if fresh is unavailable)
  • 1 can Tinned Black Beans (or kidney beans as an alternative)
  • 1 can Tinned Corn (or frozen corn as a substitute)
  • 1 packet Taco Seasoning Mix (or homemade taco seasoning)
  • 2 cups Brown Rice (or quinoa for a gluten-free alternative)
  • 1 cup Mexican Cheese (or cheddar or vegan cheese blend)
  • 4 large Flour Tortillas (or corn tortillas for a gluten-free alternative)
  • 1 cup Sour Cream (or Greek yogurt for a healthier option)
  • 2 large Limes (or lemon juice as a substitute)

Instructions 

  • Cook rice according to package instructions and set aside.
  • In a skillet, sauté chopped onions and garlic until fragrant, then add ground beef and cook until browned.
  • Add chopped capsicums, beans, corn, and taco seasoning to the beef mixture; cook for 5 minutes.
  • Warm tortillas, then fill with rice, beef mixture, cheese, and a dollop of sour cream. Squeeze lime juice over the fillings.
  • Roll up the tortillas to form burritos and serve immediately.

Notes

For a healthier option, use lean ground turkey and Greek yogurt instead of sour cream.
