Instructions
Preheat oven to 425°F and heat a cast iron skillet.
Mix dry ingredients. Whisk flour, baking powder, salt, and sugar.
Cut in cold butter until coarse crumbs form.
Add sourdough starter, milk, and egg; stir until combined.
Pat dough, fold in thirds 3-4 times, then cut into biscuits.
Bake biscuits in hot skillet for 15–18 minutes until golden. Brush with melted butter and serve warm.
Notes
Use cold butter for flaky layers and avoid overmixing for tender biscuits.
