A refreshing and easy-to-make cucumber salad with a savory sesame dressing, perfect for a light appetizer or side dish.

Ingredients

Cucumbers

  • 4 cups sliced English cucumbers (about 2 medium cucumbers)
  • 2 tbsp toasted sesame oil
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey (or maple syrup)
  • 1 clove garlic, minced
  • 1 tbsp toasted sesame seeds

Optional garnish

Instructions 

  • Wash and thinly slice the cucumbers.
  • Whisk together sesame oil, soy sauce, rice vinegar, honey, and garlic.
  • Combine cucumbers with dressing and toss gently.
  • Chill for 15–20 minutes to enhance flavor.
  • Sprinkle with sesame seeds and garnish with green onions before serving.

Notes

For extra flavor, toast the sesame seeds before adding.
