A fresh and crunchy salad featuring spiralized cucumbers and carrots, tossed in a tangy sesame dressing with optional herbs and seeds.

English or hothouse cucumbers, chilled

Instructions
Use a spiralizer or thinly slice cucumbers and carrots.
Toss cucumber with salt and drain for 15-20 minutes.
Whisk together vinegar, lime juice, honey, sesame oil, red pepper flakes, and sesame seeds.
Pat drained noodles dry, toss with dressing, and garnish with seeds, scallions, and cilantro.
Serve immediately; store leftovers in fridge for up to a day.
Notes
Adjust honey and red pepper flakes to taste for sweetness and spice.
