A hearty and flavorful dish combining tender barley and savory mushrooms, baked to perfection for a comforting meal.

Ingredients

Oil and Aromatics

  • 2 tablespoons olive oil or butter
  • 4.5 cups chopped sweet yellow onions (about 3 medium)

Mushrooms

  • 3 cups cremini mushrooms (sliced)
  • 3 cups shiitake mushroom caps (sliced)

Grains

  • 1.5 cups uncooked regular pearl barley (not quick cooking or hulled barley)
  • 1 tablespoon low-sodium soy sauce
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.125 teaspoon dried thyme

Broth

  • 4 cups vegetable broth

Garnish

  • Fresh thyme sprigs for garnishing (optional)

Instructions 

  • Melt oil or butter in a Dutch oven over medium heat. Add onion, cover and cook 25-35 minutes until golden, stirring often. Add water if drying out.
  • Add mushrooms; cook 10-20 minutes until browned. Stir in barley; cook 2 minutes. Remove from heat and stir in soy sauce, salt, pepper, and thyme.
  • Preheat oven to 350°F (175°C). Bring broth to a boil, pour over barley mixture, cover, and bake for 1 hour until barley is tender. Let stand 10 minutes. Garnish with thyme if desired.
