A flavorful and easy sheet pan dinner featuring seasoned chicken, fresh vegetables, and tangy feta cheese, perfect for a quick weeknight meal.

Ingredients

Protein

  • 1.5 pounds chicken thighs, skinless and boneless
  • 2 teaspoons kosher salt
  • 1.5 teaspoons Italian seasoning
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 medium lemon juice (about 2 tablespoons)
  • 6 tablespoons olive oil
  • 2 pints cherry tomatoes
  • 1 medium green bell pepper, diced
  • 8 cloves garlic, roughly chopped
  • 1/2 medium yellow onion, diced
  • 2 tablespoons fresh oregano, minced
  • 2 tablespoons fresh basil, minced
  • 12 ounces feta cheese in brine

Instructions 

  • Preheat oven to 375°F. Mix seasonings, salt, and pepper; add tomatoes, garlic, onions, bell pepper, lemon juice, olive oil, and herbs. Transfer to sheet pan.
  • Season chicken with lemon juice, olive oil, herbs, salt, and pepper. Place on sheet pan, leaving space for feta.
  • Add feta, remaining olive oil, lemon juice, and seasonings to the pan.
  • Bake for 20-25 minutes until chicken reaches 165°F internal temperature.
  • Toss ingredients gently, garnish with herbs, and serve.

Notes

Use fresh herbs for best flavor and adjust seasoning to taste.
