A cozy, flavorful pasta dish featuring roasted butternut squash and feta, infused with sage and garlic for a comforting meal.

Ingredients

Vegetables

  • 5 cups Butternut Squash (about 1 large butternut squash)
  • 1/2 cup Olive Oil (plus more for drizzling)
  • 2 hefty pinches Kosher Salt (just shy of 1/2 tsp)
  • 1 hefty pinch Red pepper Flakes (optional)
  • 8 oz Feta Cheese
  • 1 lb Pasta (such as rotini, orzo, or ditalini)
  • 10 leaves Fresh Sage (minced)
  • 3 cloves Garlic (finely minced)
  • 1 tbsp Hot Honey (regular honey is fine too)

Seasonings

  • to taste Fresh Cracked Black Pepper

Instructions 

  • Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Place in a baking dish with feta in the center. Bake for 30 minutes.
  • Increase oven to 450°F (230°C). Bake for another 5-10 minutes until feta is browned. Meanwhile, cook pasta until al dente, then drain, reserving 2 cups of pasta water.
  • Remove from oven, stir in garlic, sage, and honey into feta and squash. Add cooked pasta and 1 cup of pasta water, stirring to combine. Adjust sauce with more pasta water, salt, pepper, and honey as needed.

Notes

Feel free to add more honey for sweetness or more pepper for spice.
