A flavorful and easy-to-make beef burrito casserole that combines seasoned ground beef, beans, cheese, and fresh toppings for a satisfying meal.

Ingredients

Meat and Beans

  • 16 ounces ground beef
  • 1 small onion, (chopped)
  • 2 cloves garlic, (minced)
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 can (14 ounces) chili beans, (drained)
  • 1 cup bottled chunky salsa
  • cup grated Parmesan cheese
  • 8 flour tortillas Eight 8-inch flour tortillas
  • 2 cups shredded Cheddar Jack cheese
  • 3 whole green onions, (chopped)

Instructions 

  • Cook beef and onion until no longer pink; add garlic, spices, beans, salsa, and Parmesan. Heat for 5 minutes.
  • Preheat oven to 350℉ (175℃). Spray a 13x9-inch dish.
  • Fill tortillas with beef mixture, roll, and place seam-side down in dish. Top with cheese and green onions.
  • Cover with foil and bake for 20 minutes. Remove foil and bake 5-10 more minutes until bubbly.
  • Serve with sour cream, salsa, and avocado, as desired.

Notes

You can customize toppings like sour cream, salsa, and avocado for added flavor.
