A flavorful and easy-to-make casserole combining seasoned ground beef, cheese, and tortillas for a satisfying meal.

1mediumonion, diced
2clovesgarlic, minced
1can (10 oz)enchilada sauce
1can (14.5 oz)diced tomatoes, drained
1can (15 oz)black beans, drained and rinsed
1teaspoonground cumin
1teaspoonchili powder
1teaspoonsalt
1/2teaspoonpepper
Tortillas
8corn tortillascorn tortillas
2cupsshredded cheddar cheese
2cupsshredded Monterey Jack cheese
Garnish
to tastefresh cilantro for garnish(optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook ground beef with onion and garlic until browned; drain excess fat.
Add enchilada sauce, tomatoes, beans, cumin, chili powder, salt, and pepper; simmer 5 minutes.
Layer 4 tortillas in dish, spread half of beef mixture, and sprinkle with cheese. Repeat with remaining tortillas and beef, then top with remaining cheese.
Bake for 25 minutes until bubbly and browned. Rest a few minutes before serving. Garnish with cilantro if desired.
Notes
For a spicier version, add jalapeños or hot sauce.
