A flavorful and easy-to-make casserole combining seasoned ground beef, cheese, and tortillas for a satisfying meal.

Ingredients

Meat and Beans

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Tortillas

  • 8 corn tortillas corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Garnish

  • to taste fresh cilantro for garnish (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Cook ground beef with onion and garlic until browned; drain excess fat.
  • Add enchilada sauce, tomatoes, beans, cumin, chili powder, salt, and pepper; simmer 5 minutes.
  • Layer 4 tortillas in dish, spread half of beef mixture, and sprinkle with cheese. Repeat with remaining tortillas and beef, then top with remaining cheese.
  • Bake for 25 minutes until bubbly and browned. Rest a few minutes before serving. Garnish with cilantro if desired.

Notes

For a spicier version, add jalapeños or hot sauce.
