Ingredients

yellow onion, diced

uncooked rotini or penne pasta

beef broth

enchilada sauce

canned black beans, drained and rinsed

Instructions
Heat olive oil in a large skillet. Cook diced onion for 2-3 minutes, then add garlic and cook 30 seconds.
Add ground beef, cook until browned, then season with cumin, salt, and pepper.
Stir in pasta, beef broth, enchilada sauce, and black beans. Bring to a boil, then simmer 12-15 minutes until pasta is tender.
Sprinkle cheeses over the pasta, cover, and cook 2-3 minutes until melted. Garnish with cilantro before serving.
Notes
For a spicier flavor, add some chopped jalapeƱos or hot sauce.
