A quick and flavorful one-pan dish combining pasta, beef, and enchilada flavors for a satisfying meal.

Ingredients

Meat and Pasta

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups uncooked rotini or penne pasta
  • 2 cups beef broth
  • 1 can (15 ounces) enchilada sauce
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • to taste Salt and pepper
  • for garnish Fresh cilantro, chopped

Instructions 

  • Heat olive oil in a large skillet. Cook diced onion for 2-3 minutes, then add garlic and cook 30 seconds.
  • Add ground beef, cook until browned, then season with cumin, salt, and pepper.
  • Stir in pasta, beef broth, enchilada sauce, and black beans. Bring to a boil, then simmer 12-15 minutes until pasta is tender.
  • Sprinkle cheeses over the pasta, cover, and cook 2-3 minutes until melted. Garnish with cilantro before serving.

Notes

For a spicier flavor, add some chopped jalapeƱos or hot sauce.
