Delicious crispy beef taquitos perfect for a snack or main dish, topped with fresh garnishes.

Ingredients

Meat

  • 1 pound ground beef or shredded cooked beef (e.g., brisket or roast)
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt (adjust to taste)
  • 0.25 teaspoon black pepper
  • 0.5 cup tomato sauce or salsa
  • 0.5 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 12 small corn tortillas
  • to taste Vegetable oil or cooking spray (for frying or baking)
  • optional Toothpicks (for holding taquitos during cooking)

Toppings

  • to taste Guacamole
  • to taste Sour cream
  • to taste Salsa
  • to taste Shredded lettuce
  • to taste Chopped cilantro
  • to taste Diced tomatoes

Instructions 

  • Cook diced onion in a skillet until softened, then add garlic and cook briefly.
  • Add ground beef or shredded beef, cook until browned or warmed through, then stir in spices and tomato sauce. Let cool slightly and mix in cheese.
  • Warm tortillas, place 2 tbsp filling, roll tightly, and secure with toothpicks if needed.
  • Fry in hot oil until golden, or bake at 425°F for 15-20 mins, or air fry at 400°F for 6-8 mins, flipping halfway.
  • Serve with toppings like guacamole, sour cream, salsa, lettuce, and cilantro.

Notes

Ensure tortillas are pliable before filling to prevent tearing.
