Ingredients

mojo sauce

  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 1.5 cups fresh cilantro, stems removed
  • 4 cloves garlic, minced
  • 1 small serrano pepper, cored and seeds removed (OR small jalapeno)
  • 1 teaspoon agave syrup ((or honey for non-vegan))
  • 1/3 cup olive oil
  • Salt and pepper to taste Salt and pepper
  • 3 cups butternut squash, cut into 1/2-in cubes
  • 1 tablespoon olive oil
  • 1.5 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.25 teaspoon pepper
  • 3 cups hot cooked rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned corn, drained
  • 2 medium tomatoes, cored and diced into 1-in cubes
  • 2 medium avocados, pit removed and diced into 1-in cubes
  • 1 cup shredded lettuce

Instructions 

  • Roast the butternut squash with spices and olive oil until tender.
  • Prepare the mojo sauce by blending citrus juices, cilantro, garlic, pepper, and olive oil.
  • Assemble bowls with rice, roasted squash, black beans, corn, tomatoes, avocados, and lettuce. Drizzle with mojo sauce.

Notes

You can customize the heat level by adjusting the serrano or jalapeno pepper.
