A delicious and healthy baked oatmeal packed with fresh blueberries, perfect for a nutritious breakfast or snack.

Ingredients

Blueberries

  • 12 ounces fresh blueberries
  • 2 cups rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/4 cup maple syrup
  • 2 tablespoons unsalted butter (melted)
  • 1 3/4 cups unsweetened almond milk (or milk of choice)
  • 2 large eggs (whisked)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 10-inch baking dish.
  • Add all ingredients to the dish and stir gently to combine.
  • Bake for 30-35 minutes until golden brown.
  • Let cool slightly and serve warm.
  • Store leftovers in an airtight container in the fridge for up to 5 days.

Notes

You can substitute almond milk with any milk of your choice for different flavors.
