Tortillas

corn tortillas (approx. 4 inches / 10cm)

shredded Monterey Jack or Cheddar cheese

avocado, sliced

fresh cilantro, chopped
Instructions
Heat olive oil in a small saucepan over medium heat. Add beans, cumin, and garlic powder; cook 3-5 minutes. Stir in lime juice and remove from heat.
Whisk eggs, milk, salt, and pepper. Melt butter in a skillet over medium-low heat. Pour eggs, cook until soft curds form, then remove from heat.
Warm tortillas over a flame or in a skillet until pliable and slightly charred.
Assemble tacos: sprinkle cheese on tortillas, add beans, eggs, avocado slices, cilantro, and hot sauce if desired.
Notes
For extra flavor, add hot sauce or salsa.
