A delicious and hearty breakfast taco featuring seasoned black beans, fluffy eggs, and melted cheese, perfect for a satisfying start to your day.

Ingredients

Beans

  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1 tbsp fresh lime juice

Eggs

  • 6 large eggs
  • 2 tbsp whole milk
  • 1 tbsp unsalted butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Tortillas

  • 8 small corn tortillas (approx. 4 inches / 10cm)
  • 1 cup shredded Monterey Jack or Cheddar cheese
  • 1 medium avocado, sliced
  • 2 tbsp fresh cilantro, chopped

Instructions 

  • Heat olive oil in a small saucepan over medium heat. Add beans, cumin, and garlic powder; cook 3-5 minutes. Stir in lime juice and remove from heat.
  • Whisk eggs, milk, salt, and pepper. Melt butter in a skillet over medium-low heat. Pour eggs, cook until soft curds form, then remove from heat.
  • Warm tortillas over a flame or in a skillet until pliable and slightly charred.
  • Assemble tacos: sprinkle cheese on tortillas, add beans, eggs, avocado slices, cilantro, and hot sauce if desired.

Notes

For extra flavor, add hot sauce or salsa.
