A delicious and easy-to-make fruit crisp featuring caramelized brown butter, fresh peaches, blueberries, and raspberries, topped with a crunchy streusel.

Ingredients

  • 8 tbsp unsalted butter
  • ½ cup flour (for topping)
  • ½ cup brown sugar (for topping)
  • 1 tsp ground cinnamon
  • ¾ cup old-fashioned whole rolled oats (or quick oats)
  • 5 cups chopped fresh peaches (about 5 medium peaches)
  • 1 cup fresh blueberries
  • ½ cup fresh raspberries
  • ½ tsp pure vanilla extract
  • ¼ cup flour (for fruit mixture)
  • ½ cup white sugar (for fruit mixture)
  • tsp salt

Instructions 

  • Brown the butter in a saucepan until nutty and browned, then cool in the freezer for 15-20 minutes.
  • Mix remaining streusel ingredients in a bowl and refrigerate.
  • Preheat oven to 350°F (175°C). Coat a skillet with cooking spray.
  • Combine peaches, blueberries, raspberries, vanilla, flour, sugar, and salt; spread in skillet.
  • Scrape cooled butter into streusel, cut in until crumbly, and sprinkle over fruit.
  • Bake for 45-50 minutes until golden and bubbling. Cool slightly before serving.

Notes

Serve warm with ice cream or whipped cream for extra indulgence.
