Ingredients

Dough

  • 3 large eggs (room temperature)
  • 2/3 cup whole milk (room temperature)
  • 2/3 cup all-purpose flour (85 g)
  • 1 tbsp granulated sugar
  • 1/4 tsp kosher salt
  • 1/2 tsp vanilla extract
  • 3 tbsp unsalted butter
  • 2 firm-ripe pears pears (cored and 1/4-inch sliced)
  • 1/4 cup packed light or dark brown sugar
  • 1/4 tsp ground cinnamon (optional)
  • 1 small lemon (for serving)
  • as needed Confectioners’ sugar (for dusting)

Instructions 

  • Preheat oven to 425°F with a skillet inside.
  • Blend eggs, milk, flour, sugar, salt, and vanilla until smooth; let rest 5–10 min.
  • Melt butter in hot skillet, cook pears with brown sugar and cinnamon until tender.
  • Spread pears evenly, reheat skillet in oven for 2 min.
  • Whisk batter, pour around pears, bake 18–22 min until puffed and golden.
  • Squeeze lemon, dust with powdered sugar, slice, and serve immediately.

Notes

Use ripe pears for best flavor and texture.
