Ingredients

Bell Peppers

  • 6 large bell peppers (mixed colors)

Meat

  • 1 pound ground chicken or andouille sausage

Rice

  • 1 cup long-grain white rice

Broth

  • 1 cup chicken broth

Vegetables & Seasonings

  • 1 diced onion
  • 2 minced garlic cloves
  • 2 tablespoons Cajun seasoning
  • 1/4 cup chopped parsley

Salt and Pepper

Instructions 

  • Preheat oven to 375°F (190°C). Prepare peppers and cook filling.
  • Cook meat until browned, then add onion and garlic; sauté until softened.
  • Stir in rice, broth, Cajun seasoning, and parsley; season with salt and pepper.
  • Stuff peppers with rice mixture, place in baking dish, cover, and bake for 25 minutes.
  • Remove foil, bake 10-20 more minutes until peppers are tender, then serve.
