A flavorful and quick Cajun shrimp dish with colorful bell peppers and sweet corn, perfect for a satisfying meal.

Ingredients

Oil

  • 2 tbsp extra-virgin olive oil (divided)
  • 1/2 cup chopped onion (about 1 cup)
  • 2 cloves garlic (minced)
  • 2 pieces bell peppers (chopped)
  • 2/3 cup corn (frozen and defrosted or canned)
  • 1.5 lb shrimp (peeled and deveined)
  • 2 tsp Cajun seasoning
  • to taste Kosher salt
  • to taste Freshly ground black pepper
  • 1 tbsp lemon juice
  • 1 tbsp freshly chopped parsley

Instructions 

  • Heat 1 tablespoon of oil in a large skillet over medium heat. Add onion and bell peppers; sauté until tender, about 5 minutes.
  • Add garlic and corn; cook for 1 minute. Transfer vegetables to a bowl.
  • Add remaining oil to the skillet. Cook shrimp in a single layer, seasoning with salt, pepper, and Cajun seasoning, until pink, about 1-2 minutes per side.
  • Return vegetables to the skillet, add lemon juice, and toss to combine. Garnish with parsley before serving.

Notes

Adjust seasoning to taste and serve hot for best flavor.
