Instructions
Caramelize bananas: melt butter, add sugar and cinnamon, cook until dissolved, then add caramel and boil.
Cook bananas in sauce for 2 minutes per side, then set aside.
Warm milk with butter, add vanilla, then mix with mashed bananas.
Combine dry ingredients, add eggs, and fold in oats. Rest batter for 10 minutes.
Cook pancakes on hot griddle until edges set, then flip and cook through.
Serve pancakes topped with caramel bananas, whipped butter, caramel sauce, and maple syrup.
Notes
For extra flavor, toast some oats before adding to the batter.
