Ingredients

Dough

  • 1 cup gluten-free baking flour or all-purpose flour
  • 0.5 cup unflavored collagen protein powder
  • 0.5 cup coconut flour or all-purpose flour
  • 0.25 cup allulose sweetener or baking stevia, erythritol, or sugar
  • 1 tbsp baking powder
  • 0.25 tsp salt
  • 2 large whole eggs
  • 0.25 cup unsweetened almond milk or milk of choice
  • 2 tbsp vegan buttery spread or unsalted butter
  • 0.33 cup allulose sweetener or reduced-calorie brown sugar blend
  • 2 tsp ground cinnamon
  • 0.75 cup allulose sweetener or reduced-calorie brown sugar blend
  • 2 tbsp vegan buttery spread or unsalted butter
  • 0.25 tsp pure vanilla extract
  • 0.125 tsp salt

Caramel Topping

  • 0.33 cup allulose sweetener or baking stevia, erythritol, or sugar
  • 2 tbsp vegan buttery spread or unsalted butter
  • 0.25 tsp pure vanilla extract
  • 0.125 tsp salt
  • 0.33 cup chopped pecans

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix dry ingredients for dough, add eggs and milk, then knead into a soft dough. Roll between parchment paper into a rectangle.
  • Spread cinnamon-sweetener mixture over dough, cut into strips, and roll into individual rolls.
  • Bake for 15-20 minutes until edges are firm and centers are soft.
  • Prepare caramel pecan topping by melting sweetener, then stirring in butter, vanilla, salt, and pecans until thick.
  • Drizzle caramel pecan topping over baked rolls and serve.

Notes

For best results, ensure dough is not too sticky or crumbly when rolling.
