Instructions
Preheat oven to 350°F (175°C). Spray a 15x10x1 inch sheet pan with non-stick spray.
Mix dry ingredients in a bowl. In another bowl, combine oil, eggs, vanilla, and carrots. Gradually add dry to wet, then pour into pan.
Bake for 30-32 minutes until a toothpick comes out clean. Cool completely.
Cream butter and cream cheese, add vanilla, then gradually mix in powdered sugar. Spread over cooled cake.
Optional: Top with chopped pecans before serving.
Notes
For best results, use fresh ingredients and ensure the cream cheese and butter are at room temperature for smooth frosting.
