A delicious low-carb dish featuring roasted spaghetti squash topped with creamy Alfredo sauce and melted cheese.

Ingredients

Vegetables

  • 1 medium spaghetti squash
  • 2 cups Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic

Seasonings

  • to taste Salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C). Cut the squash in half and scoop out seeds.
  • Brush squash halves with olive oil, season with salt and pepper, and roast cut side down for 30-40 minutes.
  • Cool slightly, then scrape inside with a fork to create spaghetti strands.
  • Mix spaghetti strands with Alfredo sauce, garlic, mozzarella, and half Parmesan in a bowl. Stuff into squash halves and top with remaining Parmesan.
  • Bake stuffed squash for 15-20 minutes until bubbly and golden. Let cool slightly before serving.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
