Ingredients

Protein

  • 1 lb chicken breast, diced (Use thigh meat if you prefer richer flavor; adjust cook time slightly.)

Canned Goods

  • 1 can black beans, drained and rinsed (Substitute with pinto or kidney beans for more fiber.)

Grains

  • 1 cup cooked rice (white or brown) (Swap white for brown rice for more fiber; cook longer.)

Vegetables

  • 1 cup corn (frozen or canned) (Frozen sweet corn works great.)
  • 1 medium bell pepper, diced
  • 1 medium onion, diced

Oils & Spices

  • 1 tablespoon olive oil (Use avocado oil for higher smoke point.)
  • 1 teaspoon cumin (Increase for a deeper flavor.)
  • 1 teaspoon chili powder (Increase for spiciness.)
  • to taste salt and pepper

Optional toppings

  • as needed tortilla chips (Add right before serving to keep crunchy.)

Instructions 

  • Cook the diced chicken in olive oil until browned and cooked through, about 8-10 minutes.
  • Add diced onion and bell pepper; cook until softened, about 5 minutes.
  • Stir in cumin, chili powder, salt, and pepper; cook for 1 minute to toast spices.
  • Combine cooked rice, black beans, corn, and cooked chicken mixture; heat through.
  • Serve in bowls topped with optional tortilla chips, cheese, sour cream, and salsa.

Notes

For extra flavor, marinate the chicken with spices beforehand or add fresh cilantro.
