A quick and flavorful one-pan meal combining tender chicken, rice, beans, and spices, topped with cheese and served with your favorite burrito toppings.

Ingredients

olive oil

  • 2 tablespoons olive oil (divided)
  • 2 pieces boneless, skinless chicken breasts (cut into 1" bite-sized pieces)
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 cup uncooked long grain white rice
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (14.5 oz) petite diced tomatoes (drained)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 2.5 cups chicken broth
  • 1 cup shredded cheese

Instructions 

  • Cook chicken in 1 tablespoon olive oil until browned, then remove and set aside.
  • Sauté rice in remaining oil until lightly browned, about 1-2 minutes.
  • Add beans, tomatoes, seasonings, and broth; bring to a boil. Place chicken on top without stirring.
  • Cover and simmer for 20 minutes until rice is cooked and liquid is absorbed.
  • Sprinkle cheese on top, cover until melted, then serve with toppings.

Notes

For extra flavor, add fresh cilantro or lime juice before serving.
