A quick and flavorful Chinese-inspired dish featuring tender chicken, fresh vegetables, and savory noodles.
Ingredients
Protein
3–4
pieces
boneless, skinless chicken breasts
Noodles
1
piece
Lo Mein noodles (fresh or dried)
(Fresh noodles are typically more flavorful and cook faster, but dried noodles work just as well.)
Vegetables
1
piece
red bell pepper
(Select vibrant, firm bell peppers for a crispy, fresh bite.)
1
piece
yellow bell pepper
(The more colorful your veggies, the brighter your dish will be.)
2
pieces
carrots
(thinly sliced)
2
pieces
green onions
(chopped)
Sauces & Oils
¼
cup
low-sodium soy sauce
(A great choice that allows you to control the saltiness of the dish.)
1
tablespoon
sesame oil
3
cloves
fresh minced garlic
(Add after vegetables are nearly done for a fresh burst of flavor.)
Instructions
Cook the noodles according to package instructions, then drain and set aside.
Slice chicken breasts into thin strips and stir-fry in a pan until cooked through.
Add sliced bell peppers and carrots to the pan, cook until vegetables are tender.
Stir in minced garlic, soy sauce, and sesame oil; cook for another minute.
Add cooked noodles and green onions, toss to combine and heat through.
Notes
