Ingredients

Protein

  • 3 cups cooked shredded chicken (such as from a rotisserie chicken)

Pasta

  • 1 ½ cups orzo pasta

Broth

  • 3 cups low-sodium chicken stock

Seasonings

  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Cheese

  • 5.3 ounces Boursin cheese

Vegetables

  • 1 ½ cups cherry tomatoes
  • 2 cups baby spinach

Instructions 

  • Preheat oven to 425°F (220°C). Spray a 9x13 baking dish with cooking spray.
  • Mix chicken, orzo, chicken stock, salt, and pepper in the dish. Nestle Boursin cheese in the center and top with cherry tomatoes.
  • Cover with foil and bake for 30 minutes.
  • Stir in spinach and bake for an additional 5-10 minutes until orzo is cooked.
  • Stir again, let sit for 5 minutes if liquidy, then serve.

Notes

For extra flavor, sprinkle fresh herbs before serving.
