Instructions
Cook noodles until al dente, drain, and rinse under cold water.
Mix chili flakes, sugar, soy sauces, oyster sauce, and mirin to make the sauce.
Cook beef in oil until browned and charred, then add onions, garlic, and ginger; stir-fry 1-2 minutes.
Add noodles and sauce; toss to coat and heat through for 2 minutes.
Finish with sesame oil, toss, garnish with green parts of green onions, and serve hot.
Notes
Adjust spice level by adding more or less chili flakes.
