Delicious and nutritious chocolate protein pancakes perfect for a energizing breakfast or snack. Easy to make and customizable with your favorite toppings.

Ingredients

Dry ingredients

  • 1 cup flour (spelt, oat, gluten-free, or white all-purpose flour)
  • 1/4 cup chocolate protein powder
  • 2 tbsp unsweetened cocoa powder (or Dutch cocoa powder)
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp baking soda

Liquid ingredients

  • 3/4 cup milk of choice
  • 2 tbsp pure maple syrup or sweetener of choice
  • 1 tbsp oil or peanut butter or mashed banana
  • 1 large egg or mashed banana or applesauce
  • 1/2 tsp pure vanilla extract
  • 1 tsp apple cider vinegar
  • 6 oz Greek yogurt or dairy-free alternative (optional)

Instructions 

  • Whisk dry ingredients together until evenly mixed.
  • Mix in all liquid ingredients except Greek yogurt until just combined.
  • Let batter rest for 10 minutes for fluffier pancakes (optional).
  • Heat a lightly oiled skillet over medium; pour batter in 2-tbsp portions and cook until edges are dry and bubbles form, then flip and cook until golden.
  • Serve hot with maple syrup, Greek yogurt, and optional chocolate chips.

Notes

Refrigerate leftovers in a covered container for up to five days and reheat before serving.
