A deliciously easy focaccia with cinnamon-sugar filling, perfect for a quick treat or dessert.
Ingredients
Dough
4cupsbread or all-purpose flour(see notes above)
2 to 3teaspoonskosher salt(see notes above)
2teaspoonsinstant yeast(see notes above if using active dry)
2cupscold or room temperature water
olive oilolive oil
½cupbutter(divided)
½cupbrown sugar(divided)
4teaspoonscinnamon(divided)
Sea salt
flaky sea saltflaky sea salt(such as Maldon)
1cupconfectioners’ sugar
2tablespoonsmilk or heavy cream
1teaspoonvanilla extract
Instructions
Mix flour, salt, and yeast; add water and stir until sticky dough forms. Rest for 30 minutes.
Stretch and fold dough 8-10 times, then refrigerate covered for at least 12 hours.
Grease pan with butter, place dough, and let rest for 1.5 hours. Prepare cinnamon-sugar filling by melting butter, mixing with sugar and cinnamon.
Gently stretch dough to fit pan, spread filling evenly, fold dough envelope style, and rest for 1.5 hours. Then, top with remaining cinnamon-sugar mixture and sprinkle sea salt.
Bake at 375°F (190°C) for 25 minutes until golden. Cool briefly, then drizzle with glaze made from confectioners’ sugar, milk, and vanilla.
