A deliciously easy focaccia with cinnamon-sugar filling, perfect for a quick treat or dessert.

Ingredients

Dough

  • 4 cups bread or all-purpose flour (see notes above)
  • 2 to 3 teaspoons kosher salt (see notes above)
  • 2 teaspoons instant yeast (see notes above if using active dry)
  • 2 cups cold or room temperature water

  • ½ cup butter (divided)
  • ½ cup brown sugar (divided)
  • 4 teaspoons cinnamon (divided)

Sea salt

  • flaky sea salt flaky sea salt (such as Maldon)
  • 1 cup confectioners’ sugar
  • 2 tablespoons milk or heavy cream
  • 1 teaspoon vanilla extract

Instructions 

  • Mix flour, salt, and yeast; add water and stir until sticky dough forms. Rest for 30 minutes.
  • Stretch and fold dough 8-10 times, then refrigerate covered for at least 12 hours.
  • Grease pan with butter, place dough, and let rest for 1.5 hours. Prepare cinnamon-sugar filling by melting butter, mixing with sugar and cinnamon.
  • Gently stretch dough to fit pan, spread filling evenly, fold dough envelope style, and rest for 1.5 hours. Then, top with remaining cinnamon-sugar mixture and sprinkle sea salt.
  • Bake at 375°F (190°C) for 25 minutes until golden. Cool briefly, then drizzle with glaze made from confectioners’ sugar, milk, and vanilla.

Ensure to refrigerate the dough overnight for best flavor and texture.
