A creamy and colorful macaroni salad perfect for picnics and gatherings, combining fresh vegetables with a tangy dressing.

Ingredients

Pasta

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon granulated sugar
  • Salt and freshly ground black pepper, to taste Salt and pepper (to taste)
  • 1 cup diced celery
  • 1/2 cup diced red onion
  • 1/2 cup chopped bell pepper (red or green)
  • 1/2 cup shredded carrot
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced pickles or relish
  • 2 hard-boiled eggs chopped

Instructions 

  • Cook the macaroni in boiling salted water until al dente, then rinse with cold water and drain.
  • Mix mayonnaise, vinegar, mustard, sugar, salt, and pepper to make the dressing.
  • Combine cooled pasta with the dressing, then add vegetables, herbs, pickles, and eggs. Toss gently.
  • Cover and refrigerate for at least 1 hour before serving.

Notes

For extra flavor, add a pinch of paprika or chopped fresh herbs before serving.
