A warm and cozy homemade granola perfect for winter mornings, packed with spices and dried cranberries.

Ingredients

Dry ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup almonds, roughly chopped
  • 1/2 cup pecans, roughly chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup unsweetened coconut flakes

Wet ingredients

  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries

Instructions 

  • Preheat oven to 325°F (160°C) and line a baking sheet with parchment.
  • Mix oats, nuts, seeds, and coconut in a large bowl.
  • Heat maple syrup, honey, and coconut oil until smooth; add vanilla and spices.
  • Combine wet and dry ingredients; spread on baking sheet.
  • Bake for 25-30 minutes, stirring halfway; cool and add cranberries.
