Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 ounces) rotel diced tomatoes and green chilies, undrained
  • 8 ounces cream cheese, cubed
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 12 ounces pasta (such as penne or rotini)
  • 1/2 cup grated parmesan cheese
  • fresh parsley, chopped for garnish (optional)

Instructions 

  • Heat olive oil in a skillet, sauté onion and garlic until translucent.
  • Add ground beef, cook until browned.
  • Stir in Rotel tomatoes, simmer until thickened.
  • Add cream cheese, beef broth, heavy cream, and paprika; mix until smooth.
  • Cook pasta separately, then combine with sauce and stir in parmesan.
  • Garnish with parsley before serving.
