Creamy Turkey Shepherd's Pie (aka Thanksgiving Leftovers Shepherd's Pie!)

A comforting dish perfect for using up Thanksgiving leftovers, combining savory turkey and vegetables topped with creamy mashed potatoes.

Ingredients

Vegetables and Aromatics

  • 3 tbsp butter or canola oil (divided)
  • 0.5 small onion (finely diced)
  • 2 large carrots (peeled and finely diced (about 2 cups))
  • 1 stalk celery (finely diced (about 1/3-1/2 cup))
  • 0.5 tsp minced garlic
  • 1 tbsp all purpose flour

Main Filling

  • 1.5 cups chicken broth
  • 1 cup frozen peas
  • 2 cups cooked chopped turkey
  • salt and pepper
  • 0.5 tsp dried thyme

Topping

  • 3 cups mashed potatoes

Instructions 

  • Preheat oven to 375°F (190°C).
  • In an oven-safe skillet, melt 1 tbsp butter/oil, cook onion, carrots, and celery until tender (~15-20 min). Add garlic and cook 1 min.
  • Add remaining butter/oil, stir in flour, then gradually add broth, cooking until thickened.
  • Mix in peas, turkey, thyme, and season with salt and pepper. Spread mashed potatoes on top.
  • Dab with remaining butter or brush with oil. Bake for 20 minutes until heated through.

Notes

Use leftover turkey and vegetables for a quick, hearty meal.
