A comforting dish perfect for using up Thanksgiving leftovers, combining savory turkey and vegetables topped with creamy mashed potatoes.

Instructions
Preheat oven to 375°F (190°C).
In an oven-safe skillet, melt 1 tbsp butter/oil, cook onion, carrots, and celery until tender (~15-20 min). Add garlic and cook 1 min.
Add remaining butter/oil, stir in flour, then gradually add broth, cooking until thickened.
Mix in peas, turkey, thyme, and season with salt and pepper. Spread mashed potatoes on top.
Dab with remaining butter or brush with oil. Bake for 20 minutes until heated through.
Notes
Use leftover turkey and vegetables for a quick, hearty meal.
