Ingredients

Main

  • 2 cups corn kernels (fresh, canned, or thawed frozen)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 large eggs
  • ½ cup milk
  • 2 tbsp melted butter or oil
  • 2 green onions finely chopped
  • 2 tbsp chopped parsley or cilantro
  • Oil for frying for frying
  • ½ cup sour cream or Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp honey
  • Salt & pepper to taste Salt & pepper

Instructions 

  • Mix dry ingredients in a bowl.
  • Whisk eggs, milk, and melted butter in another bowl.
  • Combine wet and dry ingredients, then fold in corn, green onions, and herbs.
  • Heat oil in a skillet, then drop batter and flatten slightly.
  • Fry until golden, then drain. Mix sauce ingredients. Serve fritters warm with sauce.

Notes

Ensure oil is hot enough before frying for crispy fritters.
