Ingredients

Meat

  • 2 pounds beef sirloin or chuck (provides rich flavor and tender bites; ground beef can be substituted but may alter texture.)

Vegetables

  • 1 medium onion (adds a sweet complement; yellow or white onions work best.)
  • 3 cloves garlic (enhances aroma and depth; fresh minced garlic is preferred for maximum flavor.)

Mushrooms

  • 8 ounces mushrooms (brings umami goodness; substitute with button or oyster mushrooms for variety.)

Liquids

  • 2 cups beef broth (infuses moisture and flavor; adding red wine boosts richness.)
  • 2 tablespoons worcestershire sauce (provides tangy depth; soy sauce can be used as an alternative.)
  • 1 tablespoon dijon mustard (adds a zesty kick; yellow mustard can also be substituted for a milder option.)
  • 1 teaspoon salt (essential for enhancing flavors; adjust to your personal taste.)
  • 1 teaspoon black pepper (essential for enhancing flavors; adjust to your personal taste.)

Dairy

  • 1 cup sour cream (delivers that creamy texture; greek yogurt is an option but may alter consistency when heated.)
  • 2 tablespoons all-purpose flour (thickens the sauce for a dreamy finish; cornstarch is a gluten-free replacement.)

Carbs

  • 12 ounces egg noodles or rice (acts as a delightful base; choose according to preference.)
  • 2 tablespoons fresh parsley (adds a pop of color and freshness as a garnish; optional but recommended.)

Instructions

  • Heat a skillet over medium-high heat, add oil, and sear beef until browned. Transfer to crockpot.
  • Sauté onion and garlic in the skillet until soft, then add to the crockpot with beef.
  • Add mushrooms, broth, Worcestershire sauce, mustard, salt, and pepper to the crockpot. Mix well.
  • Cover and cook on low for 6 hours or high for 3 hours until beef is tender.
  • Mix sour cream and flour, stir into the crockpot, and cook uncovered to thicken.
  • Serve over cooked noodles or rice, garnished with parsley if desired.

For a richer flavor, consider adding a splash of red wine to the broth.
