A hearty and flavorful chili made with lean ground turkey, vegetables, and beans, perfect for a cozy meal.

Ingredients

Meat and aromatics

  • 1 tablespoon olive oil
  • 1.5 pounds 98% lean ground turkey
  • 1 cup diced yellow onion (about 1 medium)
  • 1 red pepper chopped red pepper
  • 2 teaspoons minced garlic (about 2 cloves)
  • 1 packet chili seasoning (1 oz packet or homemade)
  • 1 can petite diced tomatoes (14.5 oz)
  • 1 can tomato sauce (14.5 oz)
  • 1 can black beans in chili sauce (15.5 oz)
  • 1 can red kidney beans (15 oz, drained and rinsed)
  • 0.5 cup chicken broth
  • 1 cup frozen corn

Chili toppings

Instructions 

  • Add olive oil to a skillet and cook ground turkey until browned, breaking it up.
  • Add diced onion and chopped red pepper to the skillet, cook 3-4 minutes. Stir in garlic and chili seasoning, cook 30 seconds. Transfer to slow cooker.
  • Add tomatoes, tomato sauce, beans, chicken broth, and corn to the slow cooker. Stir well.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours. Stir before serving and add toppings.

Notes

For a spicier chili, add hot sauce or chili flakes to taste.
