Ingredients

Dough

  • 0.5 cup unsalted butter (Use melted butter for a rich, moist texture.)
  • 0.6667 cup light brown sugar (Lightly packed for the perfect balance of sweetness.)
  • 2 large eggs (Ensure they’re at room temperature for better blending.)
  • 2 cups mashed very ripe bananas (The riper, the sweeter!)
  • 2 teaspoons pure vanilla extract (A splash of vanilla elevates the flavor.)
  • 1.75 cups all-purpose flour (For a fluffy structure that holds together beautifully.)
  • 1 teaspoon baking soda (This will give your muffins a lovely rise.)
  • 0.25 teaspoon salt (Enhances the overall flavor of the muffins.)
  • 0.5 teaspoon ground cinnamon (A warm spice that complements bananas beautifully.)
  • 0.5 cup chopped nuts (Choose any nut for an added crunch!)
  • 0.25 cup brown sugar (A sweet, crunchy topping for that extra sweetness.)
  • 2-3 tablespoons chopped nuts (Use the same nuts as in the batter.)

Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • Mix melted butter and brown sugar until well combined. Add eggs, mashed bananas, and vanilla; mix thoroughly.
  • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add dry ingredients to wet mixture, stirring until just combined.
  • Fold in chopped nuts. Divide batter evenly among muffin cups. Top with a sprinkle of brown sugar and chopped nuts.
  • Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Cool slightly before serving.

Notes

For extra flavor, add a handful of chocolate chips or dried fruit to the batter.
