A simple and delicious dessert with a sweet, tangy filling in a flaky pie crust.

Ingredients

Pie Crust

  • 1 store-bought refrigerated pie crust store-bought refrigerated pie crust (chilled) (Pillsbury recommended)

Sugar

  • 1 ½ cups granulated sugar

Dry Ingredients

  • ¼ cup yellow cornmeal
  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt

Eggs and Liquids

  • 3 large eggs large eggs
  • 2 egg yolks egg yolks
  • 2 tablespoons freshly squeezed lemon juice
  • 1/3 cup buttermilk

Butter

  • ¼ cup unsalted butter (melted)

For Serving

  • as needed Powdered sugar (for dusting)

Instructions 

  • Preheat oven to 350°F (175°C). Place a baking sheet on the middle rack.
  • Guide the pie crust onto a greased pie plate and press into place. Prick the base with a fork and freeze for 20 minutes.
  • Mix sugar, cornmeal, flour, and salt. Whisk in eggs, yolks, lemon juice, buttermilk, and melted butter until smooth.
  • Pour filling into the crust, bake for 30 minutes, then cover with foil and bake for another 20 minutes. Cool and chill.
  • Dust with powdered sugar before serving.

Notes

Ensure the pie is slightly jiggly in the center when cooled for best texture.
