Instructions
Preheat oven to 350°F (175°C). Place a baking sheet on the middle rack.
Guide the pie crust onto a greased pie plate and press into place. Prick the base with a fork and freeze for 20 minutes.
Mix sugar, cornmeal, flour, and salt. Whisk in eggs, yolks, lemon juice, buttermilk, and melted butter until smooth.
Pour filling into the crust, bake for 30 minutes, then cover with foil and bake for another 20 minutes. Cool and chill.
Dust with powdered sugar before serving.
Notes
Ensure the pie is slightly jiggly in the center when cooled for best texture.
