  • 1 lb Boneless chicken thighs (tender and juicy)

Grains

  • 1 cup Long-grain white rice (fluffy and separate)

Broth & Liquids

  • 2 cups Chicken broth (enriches the rice)

Spices & Seasonings

  • 1 tsp Black pepper (freshly ground for bold flavor)

Vegetables

  • 1 medium Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 tbsp Olive oil (for cooking)
  • 1 cup Bell peppers (diced)
  • 1 cup Frozen peas
  • 2 tbsp Fresh parsley (chopped)

Instructions 

  • Cook chicken thighs in olive oil until browned, then set aside.
  • Sauté chopped onion and minced garlic until fragrant.
  • Add diced bell peppers and cook until tender.
  • Stir in rice, black pepper, and chicken broth; bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes until rice is cooked.
  • Stir in frozen peas and chopped parsley; cook for 2-3 minutes. Serve hot.

Notes
