Delicious and crispy eggless corn fritters perfect for a quick snack or appetizer.

Ingredients

Dairy & Flour

  • 30 g butter
  • 20 g all-purpose flour
  • 240 ml milk

Seasonings & Corn

  • Salt and pepper to taste Salt and pepper
  • 175 g corn kernels ((fresh, frozen or leftover corn on the cob))
  • 10 g cornstarch

Cheese & Coating

  • 80 g cheese, grated ((cotija, feta, mozzarella, parmesan, Monterey jack, or white cheddar))
  • 135 g panko

Oil

  • Oil in spray oil spray

Instructions 

  • Melt butter in a pan over medium heat. Add flour, cook 1-2 min, then stir in milk until thickened (3-4 min). Season with salt and pepper.
  • Mix in corn kernels, then remove from heat. Add cornstarch and cheese; stir for 2 min. Chill until cold (1-2 hrs).
  • Form disks with hands, coat with panko, then spray with oil. Cook until golden and crispy.

Notes

Ensure the mixture is fully cooled before forming to maintain shape.
