A delicious, high-protein granola that's perfect for breakfast or snacking, combining the warmth of cinnamon with the sweetness of maple syrup.

Ingredients

Oats and Nuts

  • 1/3 cup oil (high oleic sunflower, olive oil, avocado oil, coconut oil)
  • 1/3 cup maple syrup (or honey)
  • 1 tablespoon vanilla
  • 2 cups whole rolled oats
  • 1 cup sliced almonds (or chopped)
  • 1 cup chopped walnuts (or pecans)
  • 1 cup plain protein powder ((animal or plant-based))
  • 1/2 cup sunflower seeds (roasted or raw)
  • 1/4 cup flax seeds (or ground flax)
  • 1/4 cup hemp seeds
  • 1-2 tablespoons cinnamon (to taste (I use 2 tablespoons))
  • 1/2 teaspoon salt (optional if nuts and seeds are unsalted)

Instructions 

  • Preheat oven to 325°F (160°C) and line a baking sheet with parchment or silicone.
  • Mix oil, maple syrup, and vanilla in a large bowl.
  • Add oats, nuts, seeds, cinnamon, and salt; stir until evenly coated.
  • Spread mixture on the baking sheet and press into an even layer.
  • Bake for 24-26 minutes, rotating halfway; cool on a rack for 1 hour before breaking into chunks.

Notes

Store in an airtight container for up to a month at room temperature.
