Delight in these adorable pie cookies filled with fruit fillings and topped with icing, perfect for a quick and tasty treat.

Pie Crusts

store-bought double pie crust
(thawed to room temp)
Filling

Egg Wash & Topping

Instructions
Preheat oven to 350°F (175°C). Cut out 12 bottoms from each pie crust and place on baking sheets.
Place 1 Tbsp of filling on each bottom, then cut lattice strips from the third dough and assemble with egg wash.
Cut out tops from the fourth dough, make slits, and seal with crimped edges. Brush with egg wash and sprinkle sugar if desired.
Bake for 20-25 minutes until golden brown. Cool on a rack.
Whisk powdered sugar, heavy cream, and vanilla to make icing. Pipe onto cooled pie cookies and enjoy!
Notes
Use different fruit fillings for variety, and reroll scraps to maximize yield.
