Delight in these adorable pie cookies filled with fruit fillings and topped with icing, perfect for a quick and tasty treat.

Ingredients

Pie Crusts

  • 2 boxes store-bought double pie crust (thawed to room temp)

Filling

  • 1 can E.D.SMITH® Apple Pie Filling
  • 1 can E.D.SMITH® Cherry Pie Filling
  • 1 can E.D.SMITH® Blueberry Pie Filling

Egg Wash & Topping

  • 1 large egg
  • 1 tbsp sugar or coarse sugar (optional)
  • 1 1/2 cup Powdered Sugar
  • 3 tbsp Heavy Cream
  • 1 tsp Pure Vanilla Extract

Instructions 

  • Preheat oven to 350°F (175°C). Cut out 12 bottoms from each pie crust and place on baking sheets.
  • Place 1 Tbsp of filling on each bottom, then cut lattice strips from the third dough and assemble with egg wash.
  • Cut out tops from the fourth dough, make slits, and seal with crimped edges. Brush with egg wash and sprinkle sugar if desired.
  • Bake for 20-25 minutes until golden brown. Cool on a rack.
  • Whisk powdered sugar, heavy cream, and vanilla to make icing. Pipe onto cooled pie cookies and enjoy!

Notes

Use different fruit fillings for variety, and reroll scraps to maximize yield.
