A classic and simple potato salad perfect for picnics and gatherings, combining tender potatoes with a creamy dressing and fresh herbs.

Ingredients

Potatoes

  • 3 pounds potatoes (peeled, such as Yukon gold)
  • 1 cup mayonnaise
  • 3 eggs hard boiled, peeled and chopped
  • 2 stalks celery (chopped)
  • 1 medium onion (chopped)
  • 1/2 cup sweet pickle relish
  • 1/2 teaspoon salt (or to taste)
  • 1 tablespoon mustard (regular prepared yellow mustard)
  • 1/4 teaspoon black pepper
  • 1 tablespoon dill (fresh, chopped)

Instructions 

  • Cut potatoes into quarters, boil in water with 1 tbsp salt until fork tender, about 13-15 minutes.
  • Mix mayonnaise, relish, mustard, salt, and pepper until smooth.
  • Drain potatoes, cool, then chop into bite-sized pieces. Mix with dressing, add eggs, celery, onions, dill, and toss.
  • Garnish with additional dill, cover, and chill for at least 4 hours before serving.

Notes

For best flavor, let the salad chill for several hours before serving.
