Ingredients

Wet Ingredients

  • 3 large eggs
  • 0.5 cup vegetable oil
  • 1 can pumpkin puree (not pumpkin pie filling)

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 2 tsp pumpkin spice (or cinnamon)
  • 0.5 tsp salt
  • 2 tsp vanilla extract
  • 0.5 cup chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a 9x5 inch loaf pan.
  • Whisk together eggs, vegetable oil, vanilla extract, and pumpkin puree until smooth.
  • Stir in flour, sugar, baking powder, pumpkin spice, and salt until just combined.
  • Fold in chocolate chips until evenly distributed.
  • Pour batter into the loaf pan and bake for about 60 minutes.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a richer flavor, use dark chocolate chips.
