Easy Twice Baked Sweet Potatoes

A delicious and comforting dish featuring tender sweet potatoes filled with a cheesy shallot mixture, perfect for a cozy dinner or side.

Ingredients

Sweet Potatoes

  • 3 medium sweet potatoes
  • 5-1/2 Tbsp unsalted butter (divided)
  • 1/2 cup shallots (finely minced)
  • 1 tsp fresh thyme leaves (minced)

  • 1 extra-large egg egg (lightly beaten)
  • 4 ounces Fontina Cheese (cut into small cubes (buy 6 ounces with the rind))

Instructions 

  • Preheat oven to 400°F (200°C). Bake sweet potatoes for 50-60 minutes until soft.
  • Let potatoes cool, then halve lengthwise and scoop out some flesh, leaving a ½ inch border.
  • Cook shallots in 1-1/2 Tbsp butter until tender, then add minced thyme and remove from heat.
  • Mix scooped potato with remaining butter, shallots, egg, cheese, salt, and pepper. Fill potato shells and top with thyme sprigs.
  • Bake uncovered for 20-30 minutes until puffed and browned. Serve hot.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
