A delicious and comforting dish featuring tender sweet potatoes filled with a cheesy shallot mixture, perfect for a cozy dinner or side.
Ingredients
Sweet Potatoes

fresh thyme leaves

Fontina Cheese
(cut into small cubes (buy 6 ounces with the rind))
Instructions
Preheat oven to 400°F (200°C). Bake sweet potatoes for 50-60 minutes until soft.
Let potatoes cool, then halve lengthwise and scoop out some flesh, leaving a ½ inch border.
Cook shallots in 1-1/2 Tbsp butter until tender, then add minced thyme and remove from heat.
Mix scooped potato with remaining butter, shallots, egg, cheese, salt, and pepper. Fill potato shells and top with thyme sprigs.
Bake uncovered for 20-30 minutes until puffed and browned. Serve hot.
Notes
For extra flavor, sprinkle with fresh herbs before serving.
