Ingredients

Meat

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning

Base

  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels

Toppings

  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese

For serving

  • Sour cream and salsa for topping

Instructions 

  • Cook the ground beef in a skillet over medium heat for 5-7 minutes until browned, then drain excess fat.
  • Add chopped onion and minced garlic; cook for 3-4 minutes until soft.
  • Stir in taco seasoning and cook for 1-2 minutes according to package instructions.
  • Layer cooked rice, black beans, corn, seasoned beef, diced tomatoes, lettuce, and cheese in bowls. Top with sour cream and salsa, then serve.
