  • 2 teaspoons extra-virgin olive oil
  • 1 pound boneless skinless chicken thighs ((or chicken breasts cut into bite-size pieces))
  • 2 cloves garlic ((minced))
  • 1 cup yellow onion ((diced))
  • 1 tablespoon smoked paprika
  • 2 teaspoons onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 medium red bell pepper ((cored and chopped))
  • 1 medium green bell pepper ((cored and chopped))
  • 15 ounces black beans ((rinsed and drained))
  • 15 ounces whole kernel corn ((drained))
  • 1 cup diced tomatoes
  • cups white rice
  • 3 cups low-sodium chicken broth
  • ¾ cup Mexican blend cheese

Optional toppings

Instructions 

  • Heat olive oil in a skillet, cook chicken until browned (~3 min).
  • Add garlic, onion, spices, and salt; sauté until fragrant (~2 min).
  • Stir in peppers, beans, corn, tomatoes, rice, and broth; bring to boil, then simmer 15-20 min.
  • Check doneness; top with cheese, cover, and let melt (~5 min).
  • Serve warm with optional toppings and lime.

Notes

Adjust seasonings to taste and serve with fresh cilantro or lime for extra flavor.
