Instructions
Season chicken with salt and pepper. Sauté in olive oil until browned, then set aside.
Sauté onion and bell pepper until soft. Add chicken broth and scrape brown bits.
Add seasonings, tomatoes, chilies, corn, beans, and rice. Bring to a boil, then simmer covered for 20 minutes.
Stir in cooked chicken, sprinkle cheese on top, cover, and cook until rice is tender, about 8 minutes. Garnish with cilantro and serve.
Notes
Adjust seasoning to taste and serve with extra cilantro if desired.
