Fiesta Chicken and Rice

A flavorful one-pan dish combining seasoned chicken, vegetables, beans, and rice, topped with cheese and fresh toppings for a vibrant meal.

Ingredients

Spice Mix

  • 1 1/2 teaspoons chili powder
  • 1 tsp salt (each)
  • 1 tsp ground cumin (each)
  • 1/2 tsp smoked paprika (each)
  • 1/2 tsp dried oregano (each)

Main ingredients

  • 1 tablespoon olive oil
  • 1 pound uncooked chicken breasts (chopped into large bite-size pieces)
  • 1 medium onion (chopped)
  • 1 medium red bell pepper (chopped)
  • 1 medium green bell pepper (chopped)
  • 4-6 cloves garlic (minced)
  • 1 15 oz. can black beans (rinsed and drained)
  • 1 15 oz. can sweet corn (rinsed and drained)
  • 1 15 oz. can fire-roasted diced tomatoes (in their juices)
  • 1 4 oz. can mild diced green chilies
  • 1 1/2 cups instant brown rice (Do NOT use other rice)
  • 1 10 oz. can mild enchilada sauce
  • 3/4 cup low sodium chicken broth
  • 1 1/2 cups shredded cheddar cheese (divided)

Toppings

  • to taste chopped avocados
  • to taste chopped lettuce
  • to taste tortilla chips
  • to taste cilantro
  • to taste sour cream
  • to taste guacamole

Instructions 

  • Mix spices in a small bowl. Season chicken with 1 tablespoon of the spice mix.
  • Heat olive oil, sear chicken until golden, then remove. Sauté onions and peppers, add garlic and spices.
  • Return chicken to pan, add remaining ingredients and broth. Bring to boil, then simmer covered for 6-8 minutes.
  • Stir in 1 cup cheese until melted, top with remaining cheese, cover until melted. Serve with toppings and chips.

Notes

Use instant brown rice for best results. Adjust toppings to taste.
