(rinsed and drained)

(Do NOT use other rice)

Instructions
Mix spices in a small bowl. Season chicken with 1 tablespoon of the spice mix.
Heat olive oil, sear chicken until golden, then remove. Sauté onions and peppers, add garlic and spices.
Return chicken to pan, add remaining ingredients and broth. Bring to boil, then simmer covered for 6-8 minutes.
Stir in 1 cup cheese until melted, top with remaining cheese, cover until melted. Serve with toppings and chips.
Notes
Use instant brown rice for best results. Adjust toppings to taste.
