Ingredients

Vegetables

  • 4 cups shredded green cabbage (firm and fresh)
  • 2 cups shredded red cabbage
  • 1 cup peeled and grated carrots

Dressing

  • 3/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (freshly ground)

Optional

  • 2 green onions finely sliced green onions
  • chopped fresh parsley chopped fresh parsley for garnish

Instructions 

  • Rinse and shred the vegetables; peel and grate carrots; slice green onions if using.
  • Whisk together mayonnaise, vinegar, honey, mustard, celery seed, salt, and pepper to make the dressing.
  • Combine shredded vegetables in a bowl, pour dressing over, and toss gently to coat.
  • Cover and refrigerate for at least 30 minutes before serving to meld flavors and soften cabbage.
  • Stir gently, garnish with parsley, and serve chilled.
